First Pour: Alamo Prime’s Opening Cocktails
Before our Dallas steakhouse opens, meet two cocktails that bookend the night: Copper Bloom, a bright tequila highball, and Midnight Soufflé, dessert in a coupe.

Every great steakhouse needs a martini you can set your watch by. Ours is coming, and it will be very cold. But before the doors open in Dallas, our bar team wants to introduce two drinks from opposite ends of the evening: one for when the night is still deciding what it wants to be, and one for when it has already become a good story.
The opening cocktail list runs ten drinks deep, and every one of them was built with the menu in mind. That sounds obvious. It isn’t. A steakhouse bar has a specific job: wake up the appetite, stand up to salt and char, and then know exactly when to get out of the way. Copper Bloom and Midnight Soufflé are the two drinks that explain that job best.
Consider this your first look. The specs are still being tuned, the glassware is still being debated, and at least one of us has had more espresso this week than is strictly recommended. Here’s where things stand.
Start bright. Finish dark. Everything in between is a steak.

No. 01The Opener
Copper Bloom
Pink, fizzy, and nowhere near sweet.
Copper Bloom pairs blanco tequila with tart grapefruit, floral hibiscus and Cocchi Americano before finishing with sparkling mineral water. Bright, aromatic and refreshing, it brings a lighter counterpoint to the richness of the steakhouse menu.

- 1½ ozTapatio Blanco Tequila
- ¾ ozHibiscus-grapefruit cordial

Build the tequila, cordial, Cocchi and grapefruit over ice, gently stir, top with Topo Chico and garnish.

Why a Highball Belongs Next to a Ribeye
Rich food wants contrast. In Copper Bloom, grapefruit brings the acid, hibiscus brings a dry, almost tart floral note, and Topo Chico brings the bubbles that reset your palate between an oyster and the next one.
Cocchi Americano is the quiet professional in the glass. It’s an aromatized wine with a gentle bitter edge, and it gives the drink structure so the tequila reads as crisp rather than loud. The result is pink, yes, but not remotely sweet. Order one while you read the menu. Order a second when the raw bar lands.
And the Topo Chico is not a coincidence. This is a Texas bar. We have opinions about mineral water.

The Case for Drinking Dessert
At the other end of the night sits a drink that behaves like a pastry chef. Midnight Soufflé is shaken hard enough to whip espresso and cream into a velvety cap, then fine strained into a chilled coupe and finished with dark chocolate grated to order.
The backbone is St-Rémy VSOP, a French brandy with enough warmth and dried-fruit depth to keep things grounded. Mr Black adds cold-brew intensity without the syrupy sweetness of old-school coffee liqueurs, and Tempus Fugit crème de cacao brings real chocolate character. If you’ve ever ordered an espresso martini and wished it had grown up a little, meet the drink you were waiting for.

No. 02The Nightcap
Midnight Soufflé
The dessert course, shaken hard.
Midnight Soufflé is built for the end of the evening: VSOP brandy, espresso, coffee liqueur, dark cacao and cream shaken into a silky, dessert-like cocktail and finished with grated dark chocolate.

- ½ ozMr Black Coffee Liqueur
- ½ ozTempus Fugit Crème de Cacao
- ¾ ozFresh espresso

- Shaken hard, fine strained
- Garnish
- Grated dark chocolate
Shake hard with ice until fully chilled and aerated, fine strain into a chilled coupe and finish with freshly grated dark chocolate.
Try it with Mexican Chocolate Crème Brûlée or Vanilla Bean Cheesecake
It’s also the rare cocktail that can replace dessert or join it. Pair it with the Mexican Chocolate Crème Brûlée if you’re celebrating something. Pair it with the Vanilla Bean Cheesecake if you’re celebrating nothing in particular, which is honestly the best kind of celebrating.
Two Drinks, One Evening
Put them side by side and you see the whole philosophy of the bar at a glance. One is bright and built over ice; the other is rich and shaken silky. One opens the appetite; the other closes the evening. Neither is precious about it.
